Quick Peri Bites (Covid edition)

I don’t know how everyone’s Covid pantry is looking like but ours is full of staples and basics and out of some fun ingredients such as say perhaps some peri peri sauce? Now you can make some, its not difficult at all, will post a recipe about that later but if you don’t want to bother like me, read on.

So I did find some hot sauce and I felt like some Peri Peri chicken after making harri malai boti and chicken tikkah on repeat. I didn’t make peri peri sauce because no ingredients like I said. So this was the quickest closest thing I got to peri peri bites.

Want peri peri chicken and don’t have any ingredients? Look for what you DO have in your pantry and try to replicate it, and even if you aren’t able to, trust me it’ll be fine you’ll eat it, and you will love it! Whose going to come tell you you’re doing it wrong? The food police? Ignore them. Just go and create with what you have and eat.

I’ll add a more mature version of the recipe for those who want to get serious later but for now hear me out guys.
Cooking isn’t hard. I hate it when people try to make it harder than it is. You have kids to look after, a house to clean, laundry to fold, studying to do or a billion other chores to do. Stop making cooking difficult! Its not!

Quickest peri peri bites ever

Find the recipe below:

  • 1 kg boneless chicken thighs (would you believe I didn’t even cut them, sorry mama!)
  • 1/2 cup hot sauce(this had zero carbs in as we’re keto)
  • 1 tspn black pepper powder
  • 2tspn garlic powder or minced garlic
  • 2 tspn dried onion
  • 2tspn smoked paprika or any paprika you have skip if you don’t have.
  • 1 tspn salt
  • 1 tspn chilli flakes
  • 1/2 tbspn vinegar (I use apple cider vinegar)
  • 1 tbpsn lemon juice
  • pinch oregano
  • 1 cup cream
  • Save some of the sauce to drizzle on the cooked chicken later
  • Mix all this together let marinate for as long as you want and then drizzle with olive oil or your choice of oil and pan fry. We have a bbq so we cook all our meat there pretty much everyday.

Drizzle some sauce on top and we’re done. Enjoy.
