Barely managed to grab a few for a picture before the fam polished these off, I’m sure you can tell by the haphazardly placed cilantro.

We use the bbq so very much that the same old chicken bbq (tikka) gets boring. This recipe is a regular on rotation in our house to mix it up. I usually do not like putting any red chilli or even chill flakes in this because I really want the harra masala (green marinade) to shine through and have a distinct flavor.
To be honest the harra can be anything you have on hand, green chillis are the only thing that are a definite must in this recipe. I once was out of coriander so used green onions and garlic chives growing in the garden in the marinade. Absolutely delish!

I have also made this with no herbs just green chillis and it turned out equally good. I like experimenting with marinades and hate rules when it comes to cooking. Experiment, try new things. Of course classics are classics. But you know when people say “Nai yeh nai ho sakta, aisay nai banta” WRONG. Har tareekay se banta he, khana he, relax. Banao, khao aur khilao.

Here’s what I used.

Ingredients:

  1. Boneless Chicken Thighs 1600 grams
  2. Cream or Yoghurt or Sour Cream 1/3 cup
  3. Oil, Butter or Ghee 1/3 cup
  4. Cilantro one bunch (skip if you don’t have, its Covid season no reason to go out for dhaniya chillax)
  5. Green Chilies 3 to 8 depending on Chilli size and your preferred spice level. I had 3 huge jalapenos for medium spice.
  6. Onion 1 small or Quarter of a big one.
  7. Lemon/Lime 2 squeezed
  8. Garlic cloves 8-10
  9. Turmeric 1 tspn
  10. Black Pepper 2tspn (heaped)
  11. Cumin Powder 2tspn (heaped)
  12. Coriander Powder 2 tspn (heaped)
  13. Anar dana 2 tspn (heaped)
  14. Salt 3 tspn (heaped or to taste)

Method:

If you have time marinate the meat in it over night. TRUST me, the longer the marinade the more woaaahs while eating. If you don’t have time mix it all and rest for as long as you can and then cook on the grill or stove. When I don’t have time to marinate for longer, I usually up the spices a bit to make up for it. Either way the taste is great. But if you want it to be absolutely phenomenal, just blend all the ingredients together, throw in the meat and leave it overnight!

I don’t even bother cutting the chicken. Pfft, who you going to call on me? (Kidding don’t tell my mom)

I like squeezing fresh lemon on mine before eating, my husband doesn’t like any on his *GASP*

But if you’re like me you can serve yours with lemon wedges and cream drizzled on top.

Here is a tip if you want to be extra : Put your favorite cheese on it right before taking it off the heat and watch the magic melt and be extra yummy! Call it Harra Cheesy Tikkah and pretend you were up all night making it for your guests.

This works great on skewers, as a burger insert (Lol) or as is! You can use leg and thigh with bone. Since I am lazy and prefer no difficulties while eating, I buy boneless thighs (NEVER BREAST BLEH).
